Danielle came over yesterday, and after some knitting and Call the Midwife, we decided to bake!
I smooshed two lemon pie recipes together and got a Double Meringue Lemon Meringue Pie.
How is it double? Well, the crust is meringue, and so is the topping. The innards are just regular old lemon meringue pie innards.
It tastes pretty good! The bottom meringue has a bit of an eggy taste to it, and I think it might've been too thick. The moisture from the lemon curd might've had something to do with it, but I'm not sure.
I love love LOVE lemon, so I'll work on this recipe and hopefully have a perfect one to share soon!
Ooh! Before I forget, this recipe is gluten-free!
