Gluten-Free Chocolate Butterscotch Chip Cookies

Chris loves butterscotch, and I love chocolate, so a Chocolate Butterscotch Chip Cookie seemed like the perfect cookie for us! 
I finished tweaking the recipe I talked about a while back. Find the original recipe here on the DietHood blog. I've changed a bit of the method (no double-boiler) and made it gluten-free. 
This is a lovely quick-and-easy cookie!
So! Let's go!
Gluten-Free Chocolate Butterscotch Chip Cookies
Makes 18-24 cookies

Ingredients:
1/4 teaspoon baking powder
1/4 teaspoon xanthan gum
3 tablespoons butter
1 cup semi-sweet chocolate chips
2 eggs
1/2 cup sugar
2 teaspoons vanilla extract
1 1/4 cups butterscotch chips
vegetable oil 
Process:
Preheat your oven to 350F. Line baking sheets with parchment paper. 
Sift together dry ingredients and set aside. 
Cube your butter and add, along with the chocolate chips, to a microwaveable bowl. Microwave on 50% power in 15-20 second intervals. If your chocolate seizes up, add some vegetable oil about 1/2 teaspoon at a time and stir until the chocolate is smooth again. 
In a stand mixer on medium speed, mix together eggs, sugar, and vanilla until they are "pale and creamy" (according to the DietHood blog). She says 10 minutes, but I only run it about 5-7. I'm impatient for my chocolate!
Stir the dry ingredients into the eggs (you can use the "stir" setting on your mixer and it is fine). 
Fold in the melted chocolate. It will look like a chocolate blob in the middle of the creamy egg mixture, but be sure to fold gently and carefully. Through the center, around the bowl! (Right Mom?) 
Fold in the butterscotch chips after the chocolate is completely incorporated. 
Drop dough/batter in 2 tablespoon balls about 1-2 inches apart. (If you want to make them bigger, use and ice cream scoop and bake them a bit longer. They will still be amazing.)
Bake for 9-11 minutes, or longer, until cookies look dry and cracked. Let the cookies cool on the trays.
Take a picture if you want to brag about them, because they won't last long if you have a Chris in the house!

Well, I'm only half kidding. About the worst sides of people... 

I bought Chris the Mario Kart -Wii U Bundle for his birthday. 

I didn't have much experience with Mario Kart games before this. (All I know is that I stink at Double Dash!)

Mario Kart isn't my area of gaming. I'm more partial to The Sims and Harvest Moon franchises, but I really enjoy this game!

I race as Baby Daisy in the Sneeker with the flower or the cloud glider thing (that's the technical term). 

Sometimes I manage to win! Most of the time the computer is smacking me with shells when all I can manage to get from the floaty item boxes is stinkin' bananas. 

I'm not sure where I was going with this post, but Mario Kart is where a lot of my time spent with Chris has gone. 

It's my excuse for not posting quite as much recently! Maybe ;)

Tomato Sauce

I am trying my hand at making homemade tomato sauce.

It's not so bad!


I have a batch on the stove already, and I sorted my cherry and grape tomatoes. I think I'll use them for pico or salsa. Or for more snacks :)

I really love cherry tomatoes! (Pete loves tomatoes, too. Really! Next to blight and birds, he is the biggest danger to my tomatoes.)


(I sat on the floor to sort them into gallon bags. I was running out of colanders to hold them.) 

But, honestly, I'm getting a bit tired of them. I eat a huge handful a day and my tomato plants, though they have some blight, keep pumping out the tomatoes. 

It's tomato kingdom over here!

I guess it's time to have some spaghetti.
