Strawberry Refrigerator "Pi"

It's 3/14! 

Happy Pi Day!

In honor of Pi Day (and also because my friend is visiting), I made some pie! Mini refrigerator pies, that is.


 


I winged the recipe, but basically, you'll need:

1 1/2 Cups Graham Cracker Crumbs
4-6 Tbsp butter, melted
8 oz Cream Cheese
1/2 Cup Granulated Sugar, divided
1 Tsp Vanilla Extract
12-16 Fresh Strawberries
Mini-pie pan (mine makes 4 mini pies)


Melt the butter and combine with graham cracker crumbs and 1/4 cup sugar. Press mixture into the pie pan and refrigerate for 15ish minutes to help them start to hardening. 

Meanwhile, blend cream cheese and the remaining 1/4 cup of sugar in a mixer. When well blended, add the vanilla extract and mix some more. Mix until the granulated sugar has dissolved into the cream cheese and the mixture is no longer grainy. 

Spoon the cream cheese mixture into the crusts. 

Cut the tops from the strawberries and then cut all except 4 lengthwise into slices. Arrange slices in a petal form, and place the un-sliced strawberries in the middle, creating a flower. 

Chill for at least 2 hours, then serve!


There you have it!

The bottoms of this mini pie pan pop out for easy serving. I think you could also make this in a cupcake pan. I estimate it would make around 8-10 cupcake sized mini refrigerator pies.

FO Show-off Post: Traveling Ribs Baby Cocoon

It's finished!
The i-cord bow is detachable. I thought it'd be cute for pictures.

I wanted to make the cocoon 24" long, but when I switched to the third skein of yarn, the colors didn't pool the same way they did with the first two skeins even though I was careful to line up the colors, so there you have it!
